This balsamic vinegar is from Australian Vinegar (Lírah) in Stanthorpe, Southern Queensland. Lírah founder Ian Henderson learnt the craft of vinegar making while travelling through Europe, and has made it his mission to produce superior quality vinegar here in Australia. This vinegar is made from quality Australian red wine, and naturally sweetened with grape juice concentrate, making it ideal as a dressing for raddichio or cabbage salads, or for bringing out the flavours of fruits. Try soaking two cups of sliced strawberries in a tablespoon of this vinegar, along with a half teaspoon of sugar and a pinch of black pepper. Serve with your favourite vanilla ice cream.
