This sauce is Luca Ciano’s take on the classic Italian pumpkin ravioli, taking the filling and turning it into a flavoursome pasta sauce. The sweetness of the pumpkin matches perfectly with the subtle, nutty flavour of the amaretti. Italian Grana Padano cheese is then added for additional flavour and complexity to create a great allrounder suitable for any pasta dish, or try stirring mid-way through a risotto.
