A naturally sweeter ancient grain, high in protein, fibre and antioxidants, this millet can be used whole or ground to be baked in cakes, breads or muffins. It cooks quickly and doesn’t need pre-soaking. Try tossing through salads, or as a quinoa or rice substitute. To cook, add 180g to 500ml of water or veggie stock and bring to a boil. Reduce to a simmer, cover and cook for 18-20 mins or until all the liquid has been absorbed. Fork to fluff (ooh er) and serve!
