The Pialligo Estate Smokehouse (the same people that smoke our amazing Red Gum smoked salt) have done what we really all hoped someone would. Made bacon jam. Because, ‘straya. There’s nothing untoward in here, (onions, smoked bacon, sugar, port and red wine vinegar), but this stuff rocks on a cheese board, in a bacon and egg roll, or as a relish for a ham or turkey sandwich. And it’s 100% Aussie (of course it is!).
