Luke Spencer, the man behind Spencer Cocoa takes “bean to bar” very seriously. They buy cocoa beans directly from a small group of families on the island of Malekula, Vanuatu who grow, harvest, ferment and dry the cocoa. Twice a year they visit them to catch-up and select the new season’s beans that, when back in Mudgee, they roast, grind, conch and temper to create their amazing chocolate. Ingredients are minimal; cocoa beans, cocoa butter, sugar and milk powder. An indulgent treat for yourself, or a great gift for the chocoholic in your life.
