Luke Spencer, the man behind Spencer Cocoa, takes “bean to bar” very seriously. This white chocolate is made in Mudgee from a natural cocoa butter that is pressed from single origin beans grown on Bougainville Island in the Pacific Ocean. As with Spencer’s other chocolates, the ingredients are minimal; cocoa butter, sugar and milk powder. (Try comparing this to other white “chocolate” in the supermarket…) As white chocolate goes, this creamy indulgence is tough to beat.
