Teff is a fine, ancient grain from Ethiopia and Eritrea. Ground into flour, it is used to make a traditional African flat bread, injera. It is rich in calcium, fibre and protein (≈11%), has a subtle nutty flavour, and is also gluten-free. Try using it as a gluten-free substitute for flour in brownies, bread, cakes and muffins!
