This Za’atar from Palestine Fair Trade Australia is the real deal. This blend is produced by Canaan Fair Trade in Palestine’s West Bank, an organisation that works with 1700 farmers across 43 co-operatives to improve production techniques and the quality of their end product. Canaan educate farmers in sustainability, and support conversion to certified organic production. By working collectively via Canaan, the farmers are able to supply to an international market and in doing so, improve their social and economic environment.
Za’atar is actually an arabic word for a family of herbs including thyme, which is the main constituent in this blend, along with oregano, toasted sesame seeds, sumac, olive oil and sea salt. Sure, you can try dipping some oily sourdough into this mix (and it is yummy), but there are countless ways to use this blend; try sprinkling on a fresh salad of tomato, cucumber and crumbled fetta, use as a rub for roast chicken, or add to the olive oil when preparing veggies for roasting in the oven.
